Mince Pie Making
Mince pies are a Christmas essential for many of us, and there's nothing like some cosy home mince pie baking to get you in the spirit. Read our recipe guide below to make the easiest and best fresh mince pies!
Ingredients
250g plain flour
150g butter
1 tablespoon caster sugar
1 egg yolk
1-2 tablespoons of cold water
milk to glaze
Filling:
4-5 tablespoons mincemeat
1 tablespoon brandy
Serve with:
Dusting of icing sugar
double cream


Method
- Firstly sift plain flour into a bowl and rub in the butter until the mixture resembles breadcrumbs
- Mix in the sugar and egg yolk
- Then add a little water to form a dough
- knead the dough lightly and leave to chill for 15 minutes
- Split the dough in two and roll out one half on a floured surface to roughly the thickness of a pound coin
- Using a circular cookie cutter, cut 10 circles to make the bases
- Place the bases in a cupcake tin and with any excess dough, add to the other half
- Now, using the other half of the dough, roll out thicker than before replicating two stacked pound coins
- Using a fluted cutter, cut another 10 circles for the tops
- In a bowl, mix the mincemeat and brandy together and place a teaspoon inside each base, don't overfill them otherwise they will overflow when in the oven
- With a dash of milk, brush the rims of the bases before placing the tops on
- Then with a skewer poke a central hole in each of the tops to help let steam out when baking avoiding them exploding
- Bake in the oven for 15 to 20 minutes until golden
- Once baked, leave to cool for 5-10 minutes and sprinkle with icing sugar, then serve with double cream
